Tamarind Gum is a neutral polysaccharide substance extracted from the seed endosperm (also known as tamarind or sour plum seed) of tamarind plants in the pea family, which is easy to disperse in cold water and form a viscous liquid when heated. Tamarind gum has good heat resistance, salt resistance, acid resistance, freezing resistance and thawing resistance. It has the functions of stability, emulsification, thickening, condensation, water retention and film formation. Its aqueous solution has strong viscosity, which is not affected by acids and salts. It is a widely used edible gum.
