Tragacanth gum, a thickening agent. The tragacanth is white to light yellow. Odorless, tasteless, slimy taste.
Application of tragacanth gum: as a thickener, emulsifier, suspending agent, water-holding agent, film-forming agent; tragacanth can be used as an emulsion stabilizer for acidic oil-water systems in foods, such as French and Russian salads Sauce; and various other seasoning sauces, sweet and sour sauces.
